Tomato and Basil Soup

  • 4-5 ripe tomatoes (chopped)
  • 1 small onion(chopped)
  • 3-4 garlic cloves
  • 1 tablespoon olive oil or butter
  • 1 cup vegetable broth (or water)
  • 8-10 fresh basil leaves
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon sugar(optional,to balance acidity)
  • 2 tablespoons fresh cream (optional)

Method

  1. Heat oil or butter in a pan.Add chopped onion and garlic ,saute until soft.
  2. Add chopped tomatoes and cook for 5-7 minutes until mushy.
  3. Add vegetable broth and let it simmer for 5 minutes.
  4. Turn off heat ,add basil leaves,and let it cool slightly.
  5. Blend everything into a smooth puree.
  6. Strain the soup(optional for smooth texture.)
  7. Reheat , add salt , peppper , and sugar if needed.
  8. Add cream and mix well.

Serving :

  • Serve hot with toasted bread or croutons
  • Granish with fresh basil leaves.
