- 4-5 ripe tomatoes (chopped)
- 1 small onion(chopped)
- 3-4 garlic cloves
- 1 tablespoon olive oil or butter
- 1 cup vegetable broth (or water)
- 8-10 fresh basil leaves
- Salt to taste
- Black pepper to taste
- 1 teaspoon sugar(optional,to balance acidity)
- 2 tablespoons fresh cream (optional)
Method
- Heat oil or butter in a pan.Add chopped onion and garlic ,saute until soft.
- Add chopped tomatoes and cook for 5-7 minutes until mushy.
- Add vegetable broth and let it simmer for 5 minutes.
- Turn off heat ,add basil leaves,and let it cool slightly.
- Blend everything into a smooth puree.
- Strain the soup(optional for smooth texture.)
- Reheat , add salt , peppper , and sugar if needed.
- Add cream and mix well.
Serving :
- Serve hot with toasted bread or croutons
- Granish with fresh basil leaves.
